Ingredients
- 2-4 cups arugula or other hardy greens
- 2 Tablespoons coconut oil olive oil, or grass fed butter
- 1 medium red onion finely chopped
- 4 cloves garlic minced
- 1 cups BPA-free canned white beans rinsed (or 1.5cooked)
- 2 cups organic chicken broth
- 1/4 cup lemon juice
- 1/4 cup fresh parsley chopped
- Salt and pepper to taste

Instructions
- Add oil, onion and garlic to a pan over medium heat. Stir occasionally for 3-5 minutes or until onion is translucent.
- Add in the broth and the beans and cook until the combination thickens (about 10 minutes)
- Place arugula in a large bowl. Add the bean mixture and toss to coat.. Top with parsley and serve.
Recipe Notes
Tip: Toss with arugula right before serving. Store bean mixture separate from greens.
