Instructions
  1. Toast your sweet potato slices to desired level.
  2. While sweet potato is toasting add eggs, pepper, salt and herbs to a skillet and scramble or fry. (You can also poach the eggs)
  3. Serve egg on toasted sweet potato. Optional toppings: Tomatoes, green onions, salsa, sauteed mushrooms, or cilantro.
