Ingredients
- 4 cups Romaine lettuce chopped
- 2 cups organic chicken breast
- 1 Tablespoon coconut oil (or olive oil animal fat or grass fed butter)
- 1 pear peeled and diced
- 1/2 cup walnuts chopped
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Pepper to taste

Instructions
- If using pulled chicken from the bone, skip to step 7.
- Heat the oil in a skillet over medium-high heat.
- Season chicken with salt and pepper.
- Place in skillet, cook, turning once, until firm to the touch and meat is white through-out, about 5-7 minutes per side.
- Remove from heat and let cool.
- Once cool, shred chicken.
- In a large bowl combine shredded chicken, chili powder and cumin. Add diced pear and walnuts. Mix well
- Toss with chopped lettuce and serve!
