Ingredients
- 1 cup water
- 1/2 cup gluten-free rolled oats
- 1/4 cup pumpkin puree (fresh or from a BPA-free can)
- 1 tbsp chia seeds
- 1 tbsp real maple syrup
- Pumpkin pie spice, to taste

Instructions
- Add water and a dash of sea salt to a medium stock pot. Bring the water to a boil.
- Once the water is boiling, add the oats and bring the temperature to medium/low. Stir every 1-2 minutes.
- After about 10 minutes, when the oats are mostly cooked, add the pumpkin and chia seeds, and stir thoroughly.
- After another 1-2 minutes, remove the pot from heat, pour into a bowl, and top with maple syrup and pumpkin spice. Add unsweetened coconut, hemp, rice or flax milk (optional)
- Serve and enjoy!
