Ingredients
- 3 Tablespoon lemon juice
- 3 Tablespoon olive oil
- 4 Tablespoon apple cider vinegar
- 1/8 teaspoon dill dried
- 1/8 teaspoon garlic powder
- 1/2 teaspoon garlic minced
- 1 BPA-free can white beans
- 1/4 red onion minced
- 1/4 cup cilantro chopped
- 2 cucumbers spiralized or cut into matchsticks
- 2 large carrots spiralized or cut into matchsticks
- 2 Tablespoon honey or maple syrup
- 1 Tablespoon pumpkin seeds

Instructions
- In a small bowl whisk together lemon juice, olive oil, 2 Tablespoons vinegar, garlic powder, dill and garlic.
- In a separate medium bowl add beans, onion, cilantro, cucumbers and carrots.
- Add dressing and toss. Allow to marinate for 20 minutes for more flavor.
- Mix together 2 Tablespoons of honey with 2 Tablespoons of apple cider vinegar and pour over salad.
- Garnish with pumpkin seeds and serve.
